The “Bruna Alpina” cow has been living in Italy for 150 years, above all in the highest pasturelands where fields are impracticable. It is a docile animal with brown coat and a sweet and intense look. The uniqueness of its milk derives from its high protein content, particularly casein which is dramatically important to achieve the extraordinary quality standard of Parmigiano Reggiano DOP Disolabruna® which is sweeter and more aromatic than a normal Parmigiano Reggiano as proved by authoritative studies carried out in several italian universities. Nutritional features:

402 kcal per 100 gr, rich in nutrients: proteins, vitamins, phosphorus, calcium and minerals and essential amino acids, it is easily assimilated, thanks to the presence of enzymes that modify casein and make it highly digestible: for this reason it is also suitable for people intolerant to cow's milk proteins. Furthermore, its fat content is lower than most other cheeses.

How to store:

After opening a piece of Parmigiano Reggiano vacuum pack, the cheese must be stored at home in the refrigerator at a temperature between 4 and 8 C and kept in food-grade plastic film. It must keep clean the surface of the crust in order to prevent the emergence of mold.


Parmigiano Reggiano is a versatile cheese it can be used in a different ways. As a condiment, added grated on Italian pasta, or salads. As a food, eaten in small chunks, simply accompanied with bread, wine, jams, traditional basamic vinegar or fruit like aperitife.
