Parmigiano Reggiano produced with milk from the Reggiane Red Cows is recognised as the oldest Parmigiano Reggiano: the Benedictine monks used specifically this milk hundreds of years ago to make the first hard cheese from which today’s Pamigiano Reggiano has originated.
In addition to this, the Parmigiano Reggiano produced by these cows is organic: the animals are reared without the use of drugs, supplements or vitamins and their diet is 100% organic, based on barley, wheat and alfalfa; there are no traces of soya.
In summer, the cattle are fed on fresh grass, while in winter they are fed on alfalfa and hay from the fields of the Parma Apennines. This gives this cheese the added value of being recognised as a mountain product.
Finally, the product is unique for the presence of the unique sweet salt of Cervia.
The Reggiane Red Cows are known for their great physical resistance and excellent milk quality, but they produce at least a third less milk than other breeds: for this reason the Parmigiano obtained with this milk is more valuable and more expensive.
Fertilisation also takes place in a completely natural way and the first calves are not fertilised before the age of 20 months.
Thanks to the high-quality milk and its high casein content, the Parmigiano Reggiano obtained is easily digestible, with a sweet, delicate and persistent flavour.
