Chunks of Salame are a smaller, tastier and more practical version of the Salame di Felino PGI. Indeed, the mixture, made of pure Italian pork, a little salt, black pepper in grains and Malvasia dei Colli di Parma, is exactly the same.
To create this unique product, Cavalier Umberto Boschi uses only a precious cut.
The mixture is stuffed, then tied by hand with natural fibre twine, divided into chains of 4 chunks and hung for a short seasoning period.
These small Chunks of Salame are suitable for both adults and children and they are perfect especially as a snack: once the skin has been removed, you can eat them for your happy hour, cut into slices, maybe with flakes of Parmigiano Reggiano PDO or a delicious Giardiniera, all paired with our delicate sparkling wines.
Also, you can put some slices into a sandwich: in Parma, the Salame is usually tasted with the “micca”, a typical bread of the area, crunchy outside and soft inside.
How to store it: once cut, the product must be stored in the fridge, wrapped in cling film or in a cloth. Eat within a few days.
