The real secret of the Colomba is the use of natural mother yeast. This cake, typically consumed during the Easter period, is still made with the sourdough starter prepared by the founder of the company, Angelo Vergani, and following the true Milanese tradition.

Vergani’s confectioners have been refreshing the same yeast every single day for seventy years, to use it to prepare Panettone and Colomba. All products are handmade, so at least three days are necessary for the production, but this is also the company’s strenght.

Colomba can be enjoyed in many ways and literally at every meal: at breakfast, stuffed with jam or dunked in cappuccino, to accompany a glass of sparkling wine or at lunch and dinner as a delicious dessert with zabaglione or whipped cream and a sprinkled with bitter cocoa. It can also become the perfect base for creating revisited gourmet desserts, such as cheesecake and tiramisu.

How to store it: keep in its well sealed bag in a cool and dry place.

  • Appearance: Thin and not very consistent rind, yellow crumb.
  • Colour: Bright Yellow.
  • Smell: Sweet, Delicate and Citrus.
  • Taste: Sweet and harmonious.

Ingredients: Type "0" soft wheat flour - candied orange peel (18%) (orange peel - glucose-fructose syrup - sugar - acidity regulator: citric acid) - sugar - butter (milk) - icing (10 .5%) [sugar - rehydrated egg white - almond flour (10.5%) - rice flour - vegetable oil (sunflower) - natural flavourings] - fresh egg yolk - water - natural yeast (contains wheat ) - almonds (2%) - rehydrated whole milk - mono- and diglyceride emulsifiers of fatty acids - cocoa butter - honey - salt - natural flavors - natural vanilla flavor.
