The pacchero is a type of pasta of the Neapolitan tradition, made with 100% Italian durum wheat semolina. Its shape is cylindrical, similar to that of rigatoni or mezze maniche, but larger.

Once, it was considered the pasta of the poor, since just a few pieces were enough to fill the plate as they are big.

The origin of the name comes from the Greek pacchero which means full hand slap: this name is due to the noise that the pacchero does when it is cooked and put in the place with its condiment. 

The pasta is extruded through bronze, a technique which gives the pasta that opacity and roughness, characteristics which allow the pacchero to keep the sauce and flavour. The drying takes place at very low temperatures and in very long periods of time. This process allows the pasta to keep all the minerals and vitamins present inside, so its flavour will be more complete than that of other types of pasta.

The best known recipe to cook paccheri is with fish, though they are perfect also with a good meat sauce or other condiments. Paccheri can be also used to create timballi with ragù, ricotta cheese or vegetables (so the pacchero is filled with the sauce and put vertically in a baking sheet).
