When it is cold outside, there is nothing better than a tasty steaming risotto. There are many ways to cook risotto, which can really be prepared with any land or sea ingredient. However, the most popular and appreciated of the Italian tradition remains the recipe for Milanese risotto.

There are constant and precise references in the recipe books of the early 1800s, even if its origins actually date back to the distant Middle Ages.

Its classic recipe includes onion browned in butter, toasted arborio rice, then covered with vegetable broth, where it cooks slowly. Finally, it is stirred with butter, Parmigiano Reggiano cheese and, in this case, with precious saffron.

Very famous is the interpretation of the great master and chef Gualtiero Marchesi, who revisited the recipe in a modern way by adding very fine gold leaves to complete his Gold and Saffron dish. Thanks to him, but above all thanks to the taste of the Milanese risotto, its fame soon spread all over the world, so much so that in the early 1980s it became the most requested dish in restaurants in Italy and the USA.

The version of arborio rice alla Milanese from the Antico Pastificio Umbro allows you to have a tasty risotto in just a few minutes and without any effort. It will be sufficient to pour the contents of the package into 600 grams of cold salted water and cook it for 15/18 minutes, stirring occasionally. At the end of cooking, you can stir the risotto with butter and Parmigiano Reggiano PDO until it is creamy, and serve the Milanese risotto as you wish, possibly with sliced veal shank or sausages.

How to store it: store it in a cool and dry place, away from direct light.
