... The traditional balsamic vinegar of Reggio Emilia is obtained from the must of local grapes from the Lambrusco and Trebbiano vines. Cooking is carried out on direct flame, while fermentation and subsequent oxidation take place in large barrels. The typical hints of wood released by the traditional balsamic vinegar of Reggio Emilia are obtained thanks to the stages of maturation and aging in wooden barrels. Traditional balsamic vinegar is divided into three types, according to the years of aging:
• Lobster label: after 12 years
• Silver label: from 12 to 15 years old
• Gold label: over 25 years
This product is suitable for the preparation of many recipes and is a condiment that goes well with various dishes. You can enrich pinzimoni or carpaccios with the intense aroma and acidity of vinegar aged at least 12 years or add traditional hot balsamic vinegar to flavour meat, vegetables and eggs.
