Aged for over two generations in ancient wooden barrels made of Cherry, whose characteristics give the product sweetness and soft flavor nuances.
An odyssey of taste spanning two generations transforms the product of Modena's vines into this Traditional Balsamic Vinegar exceptional.
Originally, the grapes were cooked in open vats, releasing their scent into the air. The must thickened naturally and began to take on its traditional brown color.
Then comes maturation in wooden barrels: a temperature range that only the sultry summers and freezing winters of Modena can provide.
The slow aging inside the barrels is marked by the patient transfer from the largest barrel to the smallest. What you find in this bottle is the result of work that began in the last century, by a person who is now elderly and has waited all this time to be able to offer a true elixir!
It was the fine wood of the barrels that infused the sweet and sour "Balsamo" with its essences.
Each wood corresponds to a fragrance.
Use raw on meat and fish dishes, fresh and aged cheeses, surprising on custard or strawberries, fruit salad, homemade ice cream or dark chocolate shavings.
Excellent on its own, as a digestif.
To be enjoyed strictly with a white porcelain (or plastic) spoon, never in contact with metal, which would ruin the aroma and taste!

After opening, it is crucial seal the bottle tightly to limit exposure to air and store in a place with a constant temperature, AVOID STORING IN THE REFRIGERATOR where low temperatures could alter its density and aroma. By following these precautions, the vinegar will retain its extraordinary characteristics over time, allowing for optimal tasting.
