Format

A staple on the menu of every restaurant in Rome and its surroundings, the amatriciana sauce it is one of the most famous sauces in Italian tradition and is known all over the world. In reality, the recipe originates from Amatrice, a town in the province of Rieti, from which it takes its name.

After almost a century of history, amatriciana continues to inspire entire generations around the world, despite its simplicity.

It is, in fact, a sauce made with fresh Italian tomatoes and a few other ingredients: in addition to tomatoes, there is pancetta (in this case, excellent Italian guanciale is used, according to the most classic of recipes), chili pepper, and Pecorino cheese. Considering that it is always served with a plate of pasta, it is easy to understand why it is called the 5 P sauce.

The amatriciana sauce it can be paired with meat dishes such as scaloppine, vegetables or eggs, and can be used as a topping for a delicious pizza, but tradition dictates that it is best served with pasta. In Lazio, the most commonly eaten pasta shapes with amatriciana sauce are spaghetti and bucatini
