Preserved in their historic golden tins, the Rizzoli anchovies they are considered a precious legacy of the Parmesan family, which has been producing this specialty for true gourmets since 1906.
The raw material comes from the Cantabrian Sea in northern Spain, renowned for the excellent quality of its anchovies, which, thanks to the water temperature and the plankton present, have a flavor and aroma that are unique in the world. The choice of the season in which to fish for anchovies is also very important, as there are periods when they are more flavorful: the Rizzoli company is attentive to all this, as well as to sustainable fishing that preserves the seabed.
In reality, however, the secret lies in the company's processing methods, in the maturation period of over four months and in the preparation of the spicy sauce, made according to a precious recipe that has been handed down orally for five generations: everything is done strictly by hand, according to ancient family traditions.
The Rizzoli anchovies they are a truly tasty and versatile product that can be used to create real masterpieces in the kitchen. Anchovy fillets in spicy sauce are a staple ingredient in Mediterranean cuisine, as a small amount is enough to flavor any dish. Try melting a small fillet in sautéed onion before adding vegetables such as broccoli or turnip greens: your recipe will literally have an extra kick.
Anchovies in spicy sauce are also excellent on their own, served on bruschetta with a knob of butter, on focaccia or pizza, or paired with many other ingredients, especially cheese and vegetables. Rizzoli's fillets in spicy sauce are also excellent in first courses and tasty summer salads.
