The secret of this specialty lies in the production area, a territory where cows breathe fresh air and are free to graze and feed on grass and hay.

The cattle are free to move, eat, and rest without constraints; the cows feed only on grass and hay from the mountainous area of the farm and flax seeds. The result is milk of the highest quality and, consequently, a unique cheese.

Thanks to a diet based on flax seeds, the milk produced is very rich in Omega 3 and completely free of additives. The Parmigiano Reggiano obtained with this milk, it offers a combination of vitamins, proteins, calcium, and minerals in the most natural way possible and with maximum flavor.

The Parmigiano Reggiano it is an artisanal product, and in this case more than ever. The Saliceto Farm is responsible for raising the cows, milking them, and finally producing the cheese.

This wheel of Parmigiano Reggiano PDO was made two years ago using 550 liters of excellent fresh milk. The wheel is then aged in special rooms, turned, brushed, and checked by the Parmigiano Consortium starting from the twelfth month of aging.

The Consortium's experts check all the wheels with an examination called 'espertizzazione': the wheel is tapped with a hammer and the attentive ear of the taster recognizes any internal defects that could affect the quality.

Only the wheels that are perfect are marked with the special fire-branded stamp, thus becoming Parmigiano Reggiano PDO.

Seeing a whole wheel of Parmigiano Reggiano always arouses surprise and excitement. Cutting it in half and sharing the pieces is a real treat. Placing half a wheel on the table for a special occasion is sure to be a success. Diners can help themselves using the special almond-shaped knife, breaking off pieces of cheese directly from the wheel.

A tip: when the half wheel is empty, use it as a bowl to mix pasta and risotto: it will be a guaranteed success.

The rind can also be used to flavor soups or risottos during cooking.
