Parmigiano Reggiano PDO is the most popular and imitated cheese in the world; it is a unique product, made today as it was eight centuries ago.
It is a hard cheese, aged for a long period.
The Benedictine monks produced it for the first time in the thirteenth century; since then, very little has changed, as today dairymen use the same techniques and the same three ingredients: fresh cow's milk, salt and rennet.
In Parma, the native land of Parmigiano Reggiano, the Consortium of Organic Parmigiano Reggiano was established in order to protect and preserve animal welfare and to control the production of organic Parmigiano cheese. Cows are raised outdoors and eat herbs, hay and organic food which do not contain herbicides, fertilizers, pesticides and GMOs. Furthermore, animals are treated according to the principles of homeopathic medicine. Free cows make better milk; as a result, the cheese is better as well.
Indeed, the Parmesan cheese produced is also free from potentially harmful substances and is characterized by a more authentic taste and greater variety of flavours.
In addition, there are various positive effects on health: the content of vitamins A and E, which have an antioxidant power, is higher; Parmigiano Reggiano is also rich in Omega 3, which reduce the risk of contracting allergies and help protect against cardiovascular diseases.

How to store it: Parmigiano Reggiano, shipped in portions obtained directly from cutting the whole wheel, once extracted from the vacuum has to be kept wrapped in cling film and placed in the lower area of the domestic refrigerator, at a temperature between + 4 ° / + 8° C. The surface of the rind has to be kept clean in order to avoid the creation of mold.
