Saporoso Riserva is a condiment with Balsamic Vinegar of Modena PGI, aged in ash barrels for a minimum of 8 years: it is a product popular all over the world. 

This precious dressing comes from first-quality ingredients: grapes of Lambrusco and Trebbiano, typical of the area surrounding Modena, which come from the “Tenuta del Cigno” farmhouse, owned by the Malpighi family. 

The grapes are subjected to a soft pressing and slow cooking over direct heat.

The result of these first stages of processing is the must, base and essence of all products of Acetaia Malpighi, with unique organoleptic characteristics.

Only after a period of 8 years, in which the must ages in ash barrels, this peculiar product becomes “Riserva”, that is from a reserve.

The result is a product with a full and intense aroma, with a dark brown colour, a sweet-and-sour taste and an aftertaste of flowers, grass and cooked mostarda, dedicated to who is looking for original and high-quality products, for gourmet recipes and a cuisine in which tradition, culture and innovation come together. 

With respect to the “younger brother”, the “Saporoso”, the “Saporoso Riserva” is more suitable to be used raw on vegetables, roast or game, for its higher density and a more intense taste. Also, it can be used as per our tradition, on flakes of Parmigiano Reggiano PDO.
