What are the key ingredients for a delicious classic pasta dish? An excellent tomato sauce and abundant grated Parmigiano Reggiano.

The Ortolina tomato sauce entered the pantries of Italian people in the 1950s. From that moment, Rodolfi Mansueto has produced many delicious products such as the fine and chopped pulp, the classic and rustic passata, the organic line and the classic tomato concentrates prepared to give more flavour to any tomato-based recipe.

Ortolina is the most famous tomato sauce, prepared with tomatoes, vegetables, olive oil, without dyes and preservatives.

It is simple and appetizing, just like the King of cheeses, which for almost a thousand years has been produced using the same ingredients: genuine cow's milk, salt and rennet, the wisdom of the cheesemaker and a lot of time for its ageing process.

This is why Parmigiano Reggiano is a unique product of its kind; it is a PDO product which can only be made in some provinces of the Po Valley: Parma, Reggio Emilia, Modena, Bologna and Mantua.

Its history began in these lands in the 12th century, in the Benedictine abbeys between Reggio and Parma (the first dairies were born from those monasteries).

The Parmigiano Reggiano Consortium is a body created precisely to defend this millenary history from thousands of imitations all over the world; the PDO mark now makes it inimitable.

Each wheel is branded with the typical Parmigiano Reggiano lettering stamped in dots on the entire circumference of the wheels, and bears a stamp with the date of production and the number of the dairy: a real identity card that makes identification possible.

The Ortolina tomato sauce is ideal for preparing first courses of all kinds, from a risotto   to fish soups such as bagnum. It is perfect for emphasizing the taste of tomato even in simple dishes such as spaghetti with sauce. These cannot fail to be completed with grated Parmigiano Reggiano.

However, it is not the only way to consume this delicious cheese: the combination with fresh fruit such as pears or dried fruit, honey, mustards, jams and Traditional Balsamic Vinegar is excellent.

How to store Parmigiano Reggiano PDO: Parmigiano Reggiano, shipped in portions obtained directly from cutting the whole wheel, once extracted from the vacuum has to be kept wrapped in cling film and placed in the lower area of the domestic refrigerator, at a temperature between + 4 ° / + 8° C. The surface of the rind has to be kept clean in order to avoid the creation of mould.

How to store Ortolina sauce: after opening, keep the product in the refrigerator and consume within 20 days.

Aged: 24 months

Organoleptic properties: 

  • Appearance: moderately grainy, with traces of tyrosine
  • Colour: pale straw yellow
  • Smell: with an aromatic smell
  • Taste: full, slightly savoury flavour

Ingredients:  cow's milk, salt and rennet

Allergens: milk and products thereof; free from lactose, additives and preservatives

Calories per 100 gr:  402 kcal

Classic Ortolina tomato sauce:

Organoleptic properties: 

  • Appearance: tomato sauce with a sustained consistency
  • Colour: red / orange given by the mixture of tomato, vegetables and oil
  • Smell: pungent but balanced
  • Taste: sweet, flavoured and decisive

Ingredients:  70% tomato paste, vegetables in variable proportions (carrots, celery, onion), 18%, sugar, 3.5% olive oil, herbs, salt.

Allergens: celery
