The Vacca Rossa or Red Cow breed of Reggio Emilia is considered the mother of Parmigiano Reggiano; up to the 19th century, in fact, Parmesan cheese was made only with the milk of these cows.
Red Cows, however, produce a third less milk than other breeds and, for this reason, the breeding of this animal has been gradually abandoned.
Only in recent decades, thanks to the tenacity of a few breeders, Red Cows have been rediscovered: in fact, a specific Consortium was born with the aim of revaluing this breed, thus allowing the exceptional flavour of this Parmigiano Reggiano to be rediscovered.
The Parmigiano Reggiano PDO obtained from the milk of the Red Cows of Reggio Emilia has some qualitative characteristics that differentiate it from the traditional Parmigiano Reggiano and make it more digestible.
The production of Parmigiano Reggiano Vacche Rosse is subject to a strict regulation: the Red Cows are fed only with natural products, therefore hay, herbs and non-GMO certified feed; it is absolutely prohibited the use of any food technique that serves to force production, whereas the highest attention attention is paid to well-being animal. This is why in the stables there are still animals of more than 10 years of age, which is very rare for other types of farms.
The result is a Parmigiano Reggiano PDO which, despite its long ageing, maintains a sweet, delicate and persistent flavour. It is easily recognized for its characteristic straw yellow colour, the elasticity of the grain and the intense but delicate aroma.
Parmigiano Reggiano Vacche Rosse is exceptional when consumed naturally. It is ideal if accompanied by the typical wines of the production areas. Parmesan cheese Red Cows is perfect for creating rich platters of cold cuts, such as Coppa or Prosciutto di Parma, for the happy hour or as an entrée. Also, it is always excellent with a few drops of Traditional Balsamic Vinegar.
How to store it: Parmigiano Reggiano, shipped in portions obtained directly from cutting the whole wheel, once extracted from the vacuum has to be kept wrapped in cling film and placed in the lower area of the domestic refrigerator, at a temperature between + 4 ° / + 8° C. The surface of the rind has to be kept clean in order to avoid the creation of mold.
