The Vacche Rosse Reggiane cows can boast the title of mothers of Parmigiano Reggiano; until the 19th century, in fact, Parmigiano was made only with the milk of these cows.

Only in recent decades, thanks to the tenacity of a few farmers, has this breed been rediscovered. A specific consortium has been set up with the aim of promoting this breed, thus allowing the exceptional flavor of this Parmigiano to be rediscovered.

The Parmigiano Reggiano obtained from the milk of Vacche Rosse Reggiane has certain qualities that differentiate it from traditional Parmigiano Reggiano and make it easier to digest.

The production of Parmigiano Reggiano Vacche Rosse is subject to strict regulations: the Vacche Rosse cows are fed only natural products, i.e., hay, grass, and certified GMO-free feed, with an absolute ban on any feeding techniques that serve to force production, and maximum attention to animal welfare. This is why the cows in the stables are still over 10 years old, which is very rare for other types of farms.

The result is a Parmigiano Reggiano DOP which, despite its long aging, retains a sweet, delicate, and persistent flavor. It is easily recognizable by its characteristic straw yellow color, elastic texture, and intense but delicate aroma.
