The origins of Parmigiano Reggiano Vacche Rosse date back to ancient times: the Benedictine monks began to produce Parmigiano Reggiano using the milk of the Red Cows of Reggio Emilia about 8 centuries ago. Also, they referred to this breed for the first time in 1000.
Parmigiano Reggiano Vacche Rosse is thus recognized as the oldest Parmigiano Reggiano.
It is a long-lived, robust and efficient animal, very fertile and resistant to disease. However, the Red Cows actually produce little milk, about a third less than the Friesian breed.
Due to its lower productivity, the breed was endangered, but thanks to the tenacity of a group of breeders, a specific Consortium was born a few years ago with the aim of protecting this animal and therefore bringing the special Parmesan cheese made with this milk back to the market.
The production of Parmigiano Reggiano Vacche Rosse is subject to a strict regulation: the Red Cows are fed only with natural products, therefore hay, herbs and non-GMO certified feed; it is absolutely prohibited the use of any food technique that serves to force production, whereas the highest attention attention is paid to well-being animal. This is why in the stables there are still animals of more than 10 years of age, which is very rare for other types of farms.
Thanks to the fine milk and its casein content, the Parmigiano Reggiano obtained is easily digestible and, even after a long ageing of 40 months, it maintains a sweet, delicate and persistent flavour.
The aged Red Cow Parmigiano Reggiano deserves to be tasted in purity. Alone or with honey and jams, it will leave something special to remember.
How to store it: Parmigiano Reggiano, shipped in portions obtained directly from cutting the whole wheel, once extracted from the vacuum has to be kept wrapped in cling film and placed in the lower area of the domestic refrigerator, at a temperature between + 4 ° / + 8° C. The surface of the rind has to be kept clean in order to avoid the creation of mold.
