The Parmigiano Reggiano produced with milk from Vacche Rosse Reggiane cows it is recognized as the oldest Parmigiano Reggiano: around the year 1000, Benedictine monks produced the first hard cheese from the milk of these red-coated cows, which gave rise to the Parmigiano Reggiano we consume today.
