It is Parmigiano made with milk from Rosse Reggiane cows, a breed that can boast the title of "mother" of Parmigiano Reggiano. Parmigiano was born more than 800 years ago in the Benedictine monasteries of this area, where monks used milk produced by Vacche Rosse cows.

The milk of the Vacche Rosse Reggiane cows has a high percentage of casein and excellent caseification properties, making it ideal for the production of Parmigiano Reggiano. However, since Vacche Rosse cows produce much less milk than other breeds, their breeding has been abandoned over time.

In fact, it takes 14 liters of milk to make one kilogram of Parmigiano!

Only recently, thanks to the tenacity of a few farmers, has a specific consortium been created to protect this breed, and finally the Consorzio delle Vacche Rosse has returned to producing this exceptional Parmigiano.

The Parmigiano Reggiano obtained from the milk of Vacche Rosse Reggiane has certain qualities that differentiate it from traditional Parmigiano Reggiano and make it easier to digest.

The production of Parmigiano Reggiano Vacche Rosse is subject to strict regulations: the Vacche Rosse cows are fed only natural products, i.e. hay, grass and certified GMO-free feed, with a total ban on any feeding techniques that serve to force production, and maximum attention is paid to animal welfare. This is why the cows in the stables are still over 10 years old, which is very rare for other types of farms.

The result is a Parmigiano Reggiano PDO which, despite its long aging, retains a sweet, delicate, and persistent flavor. It is easily recognizable by its characteristic straw yellow color, elastic texture, and intense but delicate aroma.

Serving half a wheel of this highly prized Parmigiano will be a celebration!

The half wheel is ideal for parties and banquets where you can share a rare and exceptional product directly from the wheel. Parmigiano is eaten in flakes, using the special knife directly from the half wheel.

A tip: when the half wheel is empty, use it as a bowl for spaghetti or risotto: it will be a hit!
