The pumpkin tortelli they have a long tradition dating back to the Renaissance (16th century) in the courts of the Gonzaga and Estensi families. Interesting references to pumpkin cappellacci can be found in cookbooks of the time. Even today, Turtell Mantovano is recognized as a typical dish of Mantua and is prepared according to recipes that have been slightly revisited in various cities in Emilia.
It is a type of fresh egg pasta stuffed, typical of the local tradition, they are rectangular in shape and filled with a mixture of baked or boiled pumpkin
amaretti biscuits, Parmigiano Reggiano cheese and nutmeg. The combination of ingredients is perfect, as the sweetness of the pumpkin meets the saltiness of the cheese and the slight bitterness of the biscuits.
It is a typical autumn dish, traditionally eaten on Christmas Eve. This is also because the pumpkin, which must be of excellent quality, ripens in September.
