Format

The real secret of Colomba it is natural sourdough. The sourdough created by Angelo Vergani, the founder, is still used today. It is still wrapped in a cloth and refreshed three times a day, as required by true Milanese tradition.

For seventy years, every day, three hundred and sixty-five days a year, the same "mother" provides the yeast for Vergani's Panettone and Colomba. Craftsmanship is Vergani's strong point, which is why production takes three days.
