The Rizzoli anchovies are considered a precious inheritance of the Parmesan family, that has been producing this delicacy since 1906.
The main ingredient comes from the Cantabrian Sea, in the north of Spain, renowned for the excellent quality of the anchovies which, thanks to the temperature of the water and the plankton of this area, have a unique flavour and aroma. Also the period for fishing is extremely important. The Rizzoli company pays attention to every detail, including the practice of sustainable fishing that preserves the seabed.
However, the secret of the popular Rizzoli anchovies, stored in the precious golden tin, is precisely in the processing, in the maturation (which takes more than four months) and in the spicy sauce, prepared according to a precious recipe that has been handed down by oral transmission for five generations: all is made by hand, according to ancient family traditions.
The Rizzoli anchovies is a tasty and versatile product, which can be used in your kitchen to create real masterpieces. It is used as a basic ingredient of Mediterranean cuisine, as a small amount is enough to flavour the preparation of any dish. If you melt a small fillet in the fried onion before cooking vegetables such as broccoli or turnip greens, your recipe will literally get an extra touch.
Anchovies in spicy sauce are excellent even if tasted alone, placed on a toasted slice of bread with a curl of butter, on a focaccia or on a pizza, combined with many ingredients, especially cheeses and vegetables. The Rizzoli fillets in spicy sauce is also an excellent ingredient in first courses and in tasty summer salads.
How to store it: : keep in a cool place. Once the tin has been opened, store the product in the refrigerator covered by the sauce
