Antico Pastificio Umbro is an artisan company located at the foot of Mount Subasio, between Assisi, Perugia, and Spoleto. Founded in the 1980s by Fernanda Mariottini, a descendant of a family of farmers, the company revives the tradition of Umbrian master pasta makers active since the early 20th century. The production stands out for its use of bronze dies, slow drying at low temperatures, and water from local springs, giving the pasta a rough and porous texture, ideal for holding sauces. In addition to pasta, the range includes ready-made risottos, spices, flavored couscous, and dried legumes. The company is BRC and IFS certified, and in 2019 it embarked on a journey towards becoming a smart factory, interconnecting its production processes to ensure quality and sustainability.
