Caseificio Sociale Borgotaro, founded in 1967 in Ponte Scodellino (Albareto, PR), is a family-run cooperative that produces mountain Parmigiano Reggiano in limited quantities (about 20 wheels per day) from local milk, guaranteeing excellence and authenticity. The raw milk is collected in cans and processed using traditional methods, minimizing the use of cold to preserve the aromas, fragrances, and biodiversity of the whey starter.
