A special product is born in the Parma Apennines Parmigiano Reggiano PDO from the mountains.
The production area is the secret to this specialty: in this region, the cows breathe better air and are free to graze and feed on flavorful, fragrant grasses and hay.
The result is milk of the highest quality and, consequently, a special Parmigiano.
The Parmigiano Reggiano by alta montagna the product made by Società Agricola Saliceto is special, but why? There are several reasons: the milk comes directly from cows raised in the green pastures of the Apennines, near the dairy; these animals are fed mainly with fodder from the same farm; all stages of production are carried out on the farm itself, which is run by two brothers who passionately carry on the ancient family tradition.
The Parmigiano Reggiano it is produced exclusively with milk, salt, and rennet. Today's product will be on your table in at least two years. It must rest on special wooden boards called scalere. During the aging process, the wheels are brushed and turned periodically.
The cheese dries out and the rind takes on a straw yellow color, which becomes darker over time.
Finally, after at least 24 months it is then cut into pieces and vacuum-packed, arriving at our warehouse ready to reach your tables and those of gourmets around the world.
