The Parmigiano Reggiano DOP it is an authentic Italian work of art, the product of the skill of artisans and the uniqueness of the territory in which it is produced.

It was created more than 800 years ago in Benedictine monasteries and has been produced in the same small area ever since, using the same recipe: simple ingredients, skilled cheese makers, and aging time.

It is made with only three ingredients: excellent fresh cow's milk, salt, and rennet.

Among the various breeds of cows raised in this area for the production of Parmigiano, the breed is becoming increasingly popular Bruna Alpina.

The bruna Alpina cow it has been present in Italy for 150 years, especially in the high pastures with the most inaccessible terrain. It is a docile animal with a brown coat and a sweet, deep gaze. The uniqueness of its milk derives from the higher quantity of proteins it contains, particularly casein, which is of fundamental importance in achieving the extraordinary quality of the Parmigiano Reggiano DOP.

The milk Bruna Alpina is a strong milk rich in nutritional values, which allows for the production of a Parmigiano Reggiano that is rich in flavor yet delicate, with a straw color typical of traditional feeding.

The Parmigiano obtained has a great roundness and harmony of flavors, rich in aromas and hints of hazelnuts, butter, yogurt, hay, and spices. Its taste and strong but pleasant character make it ideal for consumption with meals.

The Parmigiano Reggiano cow's milk Bruna Alpina it can enhance any dish with its aromas and fragrances. Its delicate flavor is ideal for an aperitif paired with raw vegetables or mild fruit chutneys, such as kiwi, apricot, or melon. It is also perfect for a healthy snack.
