Certified by the Consortium Vacche Rosse (a cooperative of farmers who process milk exclusively from the Reggiana breed), is a product it has been awarded the Protected Designation of Origin status, meaning that it can be produced today just as it was eight centuries ago, using only essential, genuine ingredients: the finest milk from the typical area, fire and rennet, using traditional methods and the art and wisdom of the cheese maker. It takes 14 liters of milk to make one kilo of Parmigiano Reggiano.

Parmigiano Reggiano made from the milk of Vacche Rosse Reggiiane cows is distinguished by certain qualities that make it unique compared to traditional Parmigiano Reggiano and also make it more digestible.

The production of Parmigiano Reggiano Vacche Rosse is subject to strict regulations: Vacche Rosse cows are fed exclusively on natural products such as hay, grass and certified non-GMO feed. The use of any feeding techniques that could force production is prohibited, and the welfare of the animals is given the utmost attention. This is also reflected in the age of the animals, which often easily exceed 10 years, a rarity in other types of farming.

The result of this process is a Parmigiano Reggiano with a sweet, delicate and persistent flavor despite its long aging. It is distinguished by its characteristic straw yellow color, elastic texture and intense but delicate aroma. These characteristics make Parmigiano Reggiano Vacche Rosse a prized and highly appreciated product.

Thanks to its remarkable versatility, Parmigiano Reggiano is an irreplaceable ingredient in good Italian cuisine. Grated, it has always been the ideal condiment for pasta, rice, and soups. After purchase or opening the vacuum-sealed package, it is important to store it in the refrigerator, maintaining a temperature between 4 and 8 °C to prevent the absorption of odors, keep it separate from other foods and store in glass or plastic containers, or wrapped in cling film for food use.
