The name of this Salame The name derives from the local dialect: strolga It means “astrologer” or “fortune-teller.” In the past, pork butchers made it to predict in advance how the curing process of larger Cured Meats—including culatello—would turn out.
The raw material is the same as that used for the finest cuts: the lean, high-quality trimmings from the pork leg, ground with salt and pepper and stuffed into natural casing, tied at the top with string to aid the drying process.
