The Parmigiano Reggiano it is unique in its kind: it is a PDO product, which means it can only be produced in certain provinces of the Po Valley, near the Po River: Parma, Reggio Emilia, Modena, Bologna, and Mantua. This is where the farms are concentrated, where the cows are fed with fodder produced in this area.
For hundreds of years, the same ingredients have been used to create what is now recognized as the King of Cheeses. Specifically, the milk originally used was from the red Reggiana and Frisona cows.
Its fame has given rise to many imitations, making it the most imitated food product in the world. It was in 1992 that the Parmigiano Reggiano it obtained the Protected Designation of Origin ( PDO), thus becoming the one and only of its kind in the world.
The condiment Saporoso, based on Balsamic Vinegar of Modena PGI, is the ideal accompaniment for this cheese. Made from cooked Trebbiano and Lambrusco grapes from Modena, it is aged for at least 6 years in fine oak barrels.
The long ageing period in these barrels, handed down for generations by the Malpighi family, allows it to achieve its characteristic deep brown colour and full-bodied yet balanced flavour that has made it famous throughout the world.
