Caciocavallo Silano PDO is a dairy excellence rooted in a millennia-old tradition of Southern Italy. Produced mainly in the mountainous areas of the Sila, it strictly follows the specifications of the consortium, which guarantees the authenticity of the PDO label. This cheese is made exclusively with raw cow's milk, processed by expert cheesemakers who preserve ancient production techniques, respecting every step from coagulation to manual stretching. The aging, lasting at least 30 days, results in a stretched curd cheese with a delicate but persistent flavor, a thin and smooth rind that tends to golden with aging.

Pecorino Toscano is a soft cheese made with sheep’s milk and which still smells of milk. It is suitable also for younger consumers and for those who love delicate flavours. It is good to be eaten alone during a happy hour, for example combined with honey, jams and caramelized fruit; also, it is delicious in salads with some drops of extra virgin olive oil. If consumed alone, you will perceive all the delicious characteriscs of a cheese produced with good sheep's milk. The product is delicate and different from other sheep cheeses, which generally have a stronger taste which tends to spicy and savoury.
How to store it: it can be stored at a temperature between +4° and +8 °, wrapped in paper for food.
