The Vergani company was born in Cremona in 1881. At the beginning, it was a small grocery store near Porta Venezia, specialised in the production of torrone (nougat). Then, the company registered a strong consolidation in the 1920s, and then expanded definitively between the 1930s and the 1980s. Over time, many traditional preparations have become part of the Vergani selection.

Among these, ParmaShop could not miss to propose the perfect accompaniment for cheeses and cold cuts of our tradition: the mixed fruit mostarda of Cremona.

The history of this highly appreciated product began in the sixteenth century, when people needed to preserve the fruit harvested in the summer for longer periods.

In Cremona, this recipe was and is still made with mixed fruit (whole or cut pieces). Fruit is covered with sugar and left to macerate for a whole day; the juice that is formed is boiled and then poured again over the pieces of fruit. The process is very long since it must be repeated at least three times in order to obtain a good mostarda.

Over time, the recipe has been perfected, especially from the point of view of the spicy note, given by the presence of mustard.

 has always been excellent to combine with cheeses, cured meats and boiled meats, especially with the fattest and richest cuts: tongue, cotechino, chicken or capon.

It is, therefore, the ideal accompaniment to be served on a charcuterie board, even if its use in the kitchen is very varied: in Parma it is a fundamental ingredient for the preparation of the filling of tortelli with pumpkin, and can also be used to dress delicious crepes with gorgonzola, carpacci and raw fish tartare.

It is also very good for preparing and completing sweet recipes.
