• 200g of thinly sliced Prosciutto di Parma PDO
• 1 ripe melon
• 150g of fresh burrata
• Grated zest of one lemon
• Fresh basil
• Extra virgin olive oil

1. Slice the melon into thin pieces.
2. Mix the burrata with lemon zest, salt, and pepper.
3. Take a slice of melon, place a slice of Prosciutto di Parma on top, and roll it up.
4. Arrange the rolls on a bed of burrata cream.
5. Garnish with fresh basil, a drizzle of olive oil, and a grind of pepper.
• 150g of diced Prosciutto di Parma PDO
• 200g of Carnaroli rice
• 2 ripe pears, peeled and cubed
• 1 finely chopped onion
• 1/2 cup of dry white wine
• Vegetable broth
• Butter
• Grated Parmigiano-Reggiano cheese
• Salt and pepper to taste
1. In a pot, sauté the onion in a bit of butter.
2. Add the rice and lightly toast it.
3. Deglaze with the white wine and let the alcohol evaporate.
4. Add the hot broth gradually while stirring the rice.
5. When the rice is almost cooked, add Prosciutto di Parma and pears.
6. Continue cooking until the rice is al dente and creamy.
7. Finish with grated Parmigiano-Reggiano cheese, butter, salt, and pepper.
• 100g of crispy Prosciutto di Parma PDO
• 2 ripe peaches, sliced
• Mixed lettuce and arugula
• Pecorino cheese, thinly shaved
• Toasted walnuts
• Balsamic vinegar reduction
• Extra virgin olive oil
1. Arrange the mixed lettuce and arugula on the base of the plate.
2. Add peach slices and pecorino cheese shavings.
3. Sprinkle with toasted walnuts.
4. Distribute the crispy Prosciutto di Parma.
5. Finish with a drizzle of balsamic vinegar reduction and a drizzle of olive oil.
