Traditional Balsamic Vinegar of Modena PDO is a product with unique and inimitable characteristics, and for this reason it is considered one of the most renowned and prized dressings in the world. Its origins date back to the XVII century, when it was consumed as a digestive at the end of a meal, in small glasses. Over time it has found use in the menus of great international chefs.

Acetaia Guerzoni made this magnificent product even more valuable, by using exclusively organic and biodynamic grapes.  The Guerzoni vinegar is therefore an organic (certified by Mipaaf) and biodynamic (certified by Demeter) product.

There are specific guidelines to follow for its production and ageing process, which takes places in barrels of different types and dimensions. 

The type of wood of which the barrel is made gives the vinegar unmistakable properties and aromas.

It is the Consortium that, after a series of strict controls on density, acidity and organoleptic properties, bottles Traditional Vinegar of Modena PDO in the Chamber of Commerce of Modena.

BIODYNAMICS – A MANUAL

1 - Biodynamic agriculture is the best model of regenerative agriculture.

2 - The term derives from the Greek words "bio", which means "life" and "dyn", which means "strength". In agriculture, it means working with one's own strength.

3 - A biodynamic company tends to produce everything internally, including seeds, fertilizers, pesticides and even feed for livestock, opposing any type of GMO.

4 - The international biodynamic certification group, Demeter, certifies the company as a whole and in all its components, while the organic certification only involves a portion of the company that meets the requirements of the harvest alone.

 5 -Biodynamic farms are set up to operate in a closed cycle to improve the way in which cultivation is carried out through a continuous relationship with nature.

6 - The backbone of biodynamic agriculture is the creation of a soil rich in nutrients using ancient and effective cultivation methods: crop rotation, cover crops, natural compost, moon phases.

7 - Essential for a biodynamic company is the biodiversity needed to attract beneficial insects and animals that prey on parasites harmful to the crop.

8 - Production is never maximized at the expense of the health and integrity of the land and food.

9 - Biodynamic sowing and harvesting are on the lunar and astronomical cycles that play a role in the plant's cycle.

10 - Regenerative agriculture studies show that the soil could be our best chance to reverse the effects of global warming and CO2 emissions.

Balsamic vinegar is suitable for important, tasty and spicy cheeses, for salads with red fruits, strawberries or cherries, to pastry creams or ice creams, for panettone or strudel, or for sophisticated cocktails.

How to store it: It is highly recommended to store it in a dry and dark place.
