The pappardelle is a type of pasta similar to tagliatelle but much larger (about 13 mm).
Made with durum wheat semolina and eggs, the pappardella is rough, so it better retains the sauce. Very popular in the north-central region, it is Tuscany that has made it famous all over Italy, with recipes in which full-bodied and strong-flavoured condiments such as wild boar, hare, porcini mushrooms or game-based sauces, are the protagonists.
