It is easy to understand why this traditional peasant recipe is called Giardiniera (the term comes from giardino, the Italian for garden): the colours of the different vegetables recall a cheerful garden in spring.
This rural preparation was born as a method for storing vegetables produced in abundance during the summer, in order to consume them even in the winter. In the classic giardiniera typical of Parma there are only fresh vegetables, generally celery, carrots, spring onions, peppers, cauliflower and gherkins boiled with vinegar and sugar, then kept in oil after cooking.
The vegetables chosen by Terre Liguri for the production of this delicacy are organic: the processing techniques and the use of carefully selected raw materials make the products of the Bio line not only good, but also of high quality, healthy and genuine.
The Giardiniera is ideal as a side dish or appetizer, to finish a rich platter of cold cuts, cheeses and vegetables.
