The “Taggiasca” olive is a typical variety of Western Liguria, in particular of the province of Imperia. It takes its name from the town Taggia, in the province of Imperia, near Sanremo. The processing techniques of the Taggiasca olive, invented by the Benedictine monks, dates back to 1600.

This variety is one of the most used for the production of Extra Virgin Olive Oil; also, it is appreciated to eat, as the fruit is tasty and rich in oil despite its small size.

Ready to taste, the Taggiasche olives are the ultimate expression of the intense and delicate flavour of ripe olives.

The harvest of this olive takes place from October to March, it is processed a few hours after its harvesting to maintain all the organoleptic properties. The olives are then selected and preserved in brine (a solution of water, salt and aromatic herbs) for a few months. They are then pitted and preserved in Extra Virgin Olive Oil.

The Taggiasche olives are perfect for your happy hour, in salads, to prepare a good Ligurian sauce (made with tomato, Genoese basil, and Taggiasche olives), or with fish. The product can be used both raw and cooked for the preparation of pizzas, focacce, first and second courses.

How to store it: store in a cool and dry place, away from heat sources. Once opened, always cover with oil, refrigerate and consume quickly..
