The MA-TRÙ Pecorino is a sheep’s milk cheese produced in the small town of Amatrice. The Caseificio Storico Amatrice still follows the ancient methods of production, that restore the flavours and sensations of the authenticity of traditional products. In order to give the cheese its typical round shape, producers still use the wooden “fascera”, a disc structure used by shepherds centuries ago.

The peculiarity of this product is that it is aged for about 8 months in a humid environment, which allows it to achieve its great taste.

This cheese is crumbly, with a straw yellow colour inside, obtained from the use of a strong rennet that enhances its flavour, slightly spicy and never salty. The outer rind is smooth, irregular and a of a deep brown with black shades due to the long ageing process.

Its strong and slightly spicy taste makes any recipe special. The MA-TRÙ Pecorino can also be enjoyed alone at the end of a meal, in order to enjoy all its nuances; alternatively, it is recommended to taste it with fig or red fruit jams, whose sweetness creates a stunning contrast. Finally, it is also perfect to be consumed grated on an excellent and authentic Amatriciana.

We recommend a good glass of red wine, with an important and robust body, to enhance its strong  flavour.

How to store it: it can be stored at a temperature between +4° and +8 °, wrapped in paper for food.

Ingredients: Pasteurized sheep's milk (Italian origin), rennet, salt, lactic ferments - Surface treated with sunflower oil and white wine vinegar.
