Parmigiano Reggiano is a unique product: it is a PDO product, so it can only be produced in some provinces of the Po Valley, near the Po river: Parma, Reggio Emilia, Modena, Bologna and Mantua. In this area there are the farms where cows are fed with fodder produced locally.
For hundreds of years, the same ingredients have been used to create Parmigiano Reggiano, which today is considered the King of cheeses.
It is so popular that it is now considered the most imitated food product in the world. However, in 1992, Parmesan cheese was acknowledged as PDO product, with Protected Designation
The Saporoso dressing, made with Balsamic Vinegar of Modena PGI, is the ideal combination for this cheese. Obtained from cooked must of Trebbiano and Lambrusco Modenese grapes, it is left to age in fine oak barrels for at least 6 years.
The long ageing period in these barrels, handed down for generations by the Malpighi family, allows this elixir to reach the characteristic deep brown colour and the full-bodied but balanced flavour that has made it famous all over the world.
Parmigiano Reggiano is an extremely versatile product, suitable for many recipes. It can be used grated to flavour pasta and risotto, or in flakes to eat with vegetables and salads. The combination with fresh fruit and dried fruit is very popular, as well as with the Saporoso dressing, made with Balsamic Vinegar of Modena PGI. Its sweet and balanced taste is in fact perfect for a strong flavour like that of Parmigiano Reggiano.
With this dressing and a little imagination you can dress desserts, ice creams or create incredible sweet and sour cocktails.
How to store Parmigiano Reggiano: Parmigiano Reggiano, shipped in portions obtained directly from cutting the whole wheel, once extracted from the vacuum has to be kept wrapped in cling film and placed in the lower area of the domestic refrigerator, at a temperature between + 4 ° / + 8° C. The surface of the rind has to be kept clean in order to avoid the creation of mould.
How to store balsamic vinegar: it is recommended to keep it well sealed in a cool and dark
