In the hillside of the Parma Apennines, expert dairymen produce the special Parmigiano Reggiano PDO.
The production area is the secret of this speciality indeed. We are in a territory where the cows breathe fresh air and are free to graze freely and eat grass and hay.
The cattle, in fact, are free to move, eat and rest without any constraint; the cows feed only on the grasses and hays of the mountainous area of the farm and on flax seeds. The result is a milk of the highest quality and, consequently, a unique cheese.
Thanks to the cows’ diet, the milk produced is very rich in Omega 3, and completely free of additives. The Parmigiano Reggiano made with this milk offers a combination of vitamins, proteins, calcium and minerals.
Parmigiano Reggiano is a handmade product: the Saliceto farm takes care of the breeding of cows, milking and finally the production of the cheese.
This wheel of Parmigiano Reggiano PDO was made 2 years ago, using 550 liters of excellent fresh milk. The wheel then ages in the appropriate rooms, it is turned, brushed, and, from the twelfth month of maturation, it is controlled by the Consortium.
The Consortium's experts check all the forms with an examination, called espertizzazione: the wheel is struck with the hammer and the attentive ear of the beater recognizes any internal defect that may interfere with its quality.
Only perfect wheels are branded with the special fire stamp, thus becoming Parmigiano Reggiano PDO.
A whole wheel of Parmigiano Reggiano always amaze and excite.
Half wheels are usually put on the table for special occasions: the guests will serve themselves directly using the special almond-shaped knife to cut and take the flakes directly from the wheel.
A tip: when the half wheel is empty, use it as a bowl to mix pasta or risotto inside into a creamy consistency: it will be a guaranteed success.
Also, the crust can be used to flavour soups or rice while cooking.
Thanks to its delicate flavour, Parmigiano Reggiano can be eaten alone, or accompanied with vegetables in irresistible salads.
A classic combination is with pears, or with fruit jams, honey, nuts and Traditional Balsamic Vinegar.
It is suitable for all ages and circumstances, it is appreciated and is good for children, sportspeople and the elderly; in piece as a snack or grated as a condiment, Parmesan cheese is always perfect.
How to store it: keep the whole wheel at a temperature between 8 ° and 10 ° C. Once cut, place the Parmigiano Reggiano in the fridge at a temperature between 4 ° and 8 °. Keep it well wrapped in cling film with the crust clean to avoid the formation of mould. We suggest to vacuum-seal the pieces obtained for a longer storage.
