Borgotaro, a small town in the province of Parma, is famous for the excellent quality of Porcini mushrooms. Their smell and taste are unique and appreciated by the gourmands from all over the world. Indeed, every autumn many enthusiastics go to Borgotaro to search this valuable treasure in beech, oak and chestnut forests.
The scientific name is boletus and they represent a fantastic ingredient for many recipes. Actually, they are very versatile so they are perfect to prepare starters, first courses (especially risotto and tagliatelle) and second courses: who has never heard of scaloppine ai funghi (scallops with mushrooms)?!
Porcini mushrooms are light and rich in minerals.
The dried Porcino Mushroom has a "Special" quality for the presence of whole pieces of its cap and stem, whose colour varies from cream to brown.
The natural birth of Porcini Mushrooms covers three seasons: winter, spring and summer; in particular, September and October give greater satisfaction!

Soak the mushrooms in warm water for twenty minutes, rinse thoroughly to remove any residual soil and squeeze them well. Then, the mushrooms are ready to be cooked.
The Porcini mushrooms are perfect to prepare a risotto: in this case, add them to a mirepoix and cook them for a while before adding rice.
You can use the Porcini mushrooms in several ways: you can enjoy them alone, as an appetizer or as a side dish to combine with meat or fish. Also, they can be used to prepare sauces or as a condiment for pasta (tagliatelle with Porcini mushrooms is a must).
