Eight centuries ago, in the ancient abbeys of Reggio Emilia, the skilled hands of the Benedictine monks began to work the milk of the red-mantled cows, thus giving rise to Parmigiano Reggiano.

Even today, tenacious local farmers and cheesemakers have carried this tradition on, following and respecting ancient methods. A special Consortium was even created to protect this precious breed of cows and thus continue to produce this superlative Parmigiano Reggiano.

The production of Parmigiano Reggiano Vacche Rosse is subject to a strict regulation: the Red Cows are fed only with natural products, therefore hay, herbs and non-GMO certified feed; it is absolutely prohibited the use of any food technique that serves to force production, whereas the highest attention attention is paid to well-being animal. This is why in the stables there are still animals of more than 10 years of age, which is very rare for other types of farms.

Thanks to the fine milk and its casein content, the Parmigiano Reggiano obtained is easily digestible and, even after a long ageing period, it maintains a sweet, delicate and persistent flavour.

ParmaShop has decided to combine Parmigiano Reggiano Vacche Rosse aged 24 and 40 months with a precious dressing made with balsamic vinegar: the Gocce D'Oro dressing, from Gualtieri’s Acetaia Al Livel, in the province of Reggio Emilia.

The grapes ripened and harvested in the farm are pressed; the must obtained is cooked in steel cauldrons and aged in fine wooden barrels and then bottled and packaged directly in the acetaia.

Obtained from ancient techniques, rich in tradition and experience, it is the perfect match for this fine Parmigiano Reggiano PDO.

The Parmigiano Reggiano produced by the Red Cows Consortium deserves to be tasted in purity. Among the many combinations (with fresh or dried fruit, honey and jam) we propose the one with balsamic vinegar which, with its sweet and sour flavour, goes perfectly with this Italian excellence.

How to store Parmigiano Reggiano: Parmigiano Reggiano, shipped in portions obtained directly from cutting the whole wheel, once extracted from the vacuum has to be kept wrapped in cling film and placed in the lower area of the domestic refrigerator, at a temperature between + 4 ° / + 8° C. The surface of the rind has to be kept clean in order to avoid the creation of mould.

How to store balsamic vinegar: it is recommended to keep it well sealed in a cool and dark place.
