Parmigiano Reggiano PDO is an authentic Italian masterpiece, a product created by skilled artisans and thanks to the uniqueness of its territory.
It was born more than 800 years ago in the monasteries of the Benedictine monks and since then it continues to be produced in the same small area following the same recipe: simple ingredients, a skillful dairyman and a long period of ageing.
Parmigiano cheese is made with only 3 ingredients: excellent fresh cow's milk, salt and rennet.
Among the various breeds of cows reared in the area of production of Parmigiano Reggiano, the Bruna Alpina breed (Brown Cow) is becoming increasingly popular.
The Brown Cow has been present in Italy for 150 years, especially in the high pastures with the most inaccessible terrains. It is a docile animal, with a brown coat, with a sweet and deep look. The uniqueness of its milk derives from the superior amount of proteins it contains, especially casein, which is of fundamental importance for achieving the extraordinary quality level of Parmigiano Reggiano PDO.
The milk of the Bruna Alpina is a strong milk, rich in nutritional values, which allows you to obtain a Parmigiano Reggiano rich in taste and delicate at the same time, with a straw-yellow colour typical of the Mediterranean diet.
The Parmesan obtained is round and harmonic in its flavour, rich in aromas with hints of hazelnuts, butter, yogurt, hay and spices. Its strong but pleasant taste makes it ideal to be consumed at meals.
Parmigiano Reggiano of Brown Cow is perfect to finish any recipe thanks to its its aromas and fragrances. It can be enjoyed during your happy hour, combined with raw vegetables or delicate fruit jams (for example kiwi, apricot or melon).
It is also great as a healthy snack.
It can be used to prepare the fillings of any recipe or simply grated to finish it: try it on our anolini.
Did you know that the crust can also be used in cooking? After having washed, dried it and removed its outermost layer with the help of a grater, the crust can be used in different ways. For example, add it while cooking soups or a vegetable minestrone: thanks to the heat, the cheese will release its flavour which will be more intense than if simply grated.
How to store it: Parmigiano Reggiano, shipped in portions obtained directly from cutting the whole wheel, once extracted from the vacuum has to be kept wrapped in cling film and placed in the lower area of the domestic refrigerator, at a temperature between + 4 ° / + 8° C. The surface of the rind has to be kept clean in order to avoid the creation of mold.
