Branded by the Red Cows Consortium (a cooperative of breeders that processes milk exclusively from the Reggiana breed), it is a PDO product, meaning Protected Designation of Origin. Indeed, it can be produced today just as it was eight centuries ago, only with essential and genuine ingredients: the prized milk from the typical area, fire, and rennet, using good old-fashioned methods, with the art and wisdom of the cheesemaker. It takes a whopping 14 liters of milk to make one kilogram of Parmigiano Reggiano.

Parmigiano Reggiano obtained from the milk of Red Reggiana Cows is distinguished by some qualities that make it unique compared to traditional Parmigiano Reggiano, and also make it more digestible.

The production of Parmigiano Reggiano from Red Cows is subject to rigorous regulations: Red Cows are exclusively fed with natural products such as hay, herbs, and certified non-GMO feeds. The use of any feeding technique that could force production is prohibited, and utmost attention is paid to the welfare of the animals. This is also reflected in the age of the animals, which often comfortably exceed 10 years, a rarity in other types of farming.

The result of this process is a PDO Parmigiano Reggiano with a sweet, delicate, and persistent flavor despite its long aging. It is distinguished by its characteristic straw-yellow color, elastic texture, and intense yet delicate aroma. These characteristics make Parmigiano Reggiano from Red Cows a precious and highly appreciated product.

Thanks to its remarkable versatility, Parmigiano Reggiano is an irreplaceable ingredient in good Italian cuisine. Grated, it has always been the ideal topping for pasta, rice, and soups. But Parmigiano Reggiano is also excellent for use at the table. Due to its fullness and delicacy of flavor, it can be eaten on its own or paired with vegetables in irresistible salads. A classic of peasant wisdom is the pairing with pears, but many have yet to discover the equally harmonious combination of flavors of Parmigiano Reggiano with fruit preserves, honey, nuts, and traditional balsamic vinegar.

How to store it:  keep the whole wheels at a temperature between 8°C and 10°C. Once cut, store Parmigiano in the refrigerator at a temperature between 4°C and 8°C, making sure to keep the rind clean to avoid mold formation and well wrapped in cling film. We suggest vacuum-sealing any leftover pieces.
