Salumificio Cavalier Umberto Boschi boasts 100 years of activity and is among the most renowned and known charcuterie factories of Parma for the quality of its products.
Strolghino is the most fashionable of the local salami: small in size, it is perfect for a happy hour with your friends. The origin of its name derives from the term strolga, meaning witch or fortune teller in the Parmesan dialect.
Tradition holds that the production of strolghino was used, in fact, to predict the ageing process of larger-sized cured meats, especially culatello.
Strolghino is made with the trimming of the lean and precious parts of the pig's thigh; the meat is salted and peppered and then put in a natural casing, tied on the head with a string, to facilitate drying and maturation. Its maturation takes about 20 days.
Strolghino is always perfect, and one slice leads to another. It is advisable to cut thick, round slices. It should not be missing on a charcuterie board of Parmesan cold cuts, with croutons, bread and typical local cheeses, such as Parmigiano Reggiano. How to store it: : once opened and cut, the product must be kept in the fridge, wrapped in cling film, and consumed within 3/4 days.
