Milan is known throughout the world for many aspects and symbols: Panettone is one of these. There are many legends related to the birth of the Milanese Panettone, and that about Toni is undoubtedly the most famous one. Toni was a scullery boy at the court of Ludovico Maria Sforza who made a mistake in preparing the dessert. So, he decided to replace it with a sweet previously prepared for his friends, called l'pan del Toni, in Italian the bread of Toni, then Panettone, which was a great success.

In addition to this legend, it is sure that a decree of 1395 allowed all the bakers of Milan to bake the so-called Pan del ton (bread of tone, of value) at Christmas: it was a white bread, made only of wheat, but which even the poor could consume on that occasion.
